Kidney Beans and Corn Recipe with Baked Chicken – EASY MEAL PREP!

Dear Readers,

After doing a lot of research on easy and healthy meal ideas, I’ve finally stumbled upon a recipe that took me 45 minutes to prepare! I found this recipe online ( and I changed it a bit to fit MY TASTE and suit MY LIKING. This recipe is so easy, it’s honestly “ dummy ” proof !!!

This recipe is enough for 3 days worth of lunch.


-4 cloves garlic

1 onion

-1 tbsp vegetable oil or olive oil

-2 big green or yellow pepper (I used yellow in mine)

-1 canned kidney beans (540 mL)

-1 canned corn (540 mL)

-1 tbsp roasted garlic and peppers seasoning by Clubhouse

-1 tbsp paprika

-pinch of salt

-3 chicken breasts

-YOUR CHOICE OF SEASONING FOR THE BREASTS: I seasoned mine with oregano and cajun seasoning from Clubhouse.



First, we need to bake our chicken. Preheat your oven to 400 degrees F (200 degrees C), then season your chicken breasts and drizzle some olive or vegetable oil on them too. After a thorough seasoning and oiling, you can now place your chicken inside the oven to cook! Cook time for the chicken is somewhere between 25 – 30 minutes. ALSO: flip your chicken breasts once after 10 minutes to ensure even cooking.

While the chicken is in the oven, you can now begin cooking the beans and corn.

1.) Gather ingredients

2.) Slice, mince and prepare your onions, garlic, and peppers

3.) Sautee garlic and onions

4.) Add peppers and cook until tender

5.) Add your seasoning – paprika + garlic and peppers + salt

6.) Add kidney beans and INCLUDE about 1/3 cup of the bean’s liquid flavor

7.) Cook for 5 minutes until beans are soft but still firm

8.) Add corn, DRAIN ALL THE LIQUID out from the can. Just add the corn, NO LIQUIDS!

9.) Cook for another 10 minutes

10.) Let it cool before placing the prepped meal in your containers
