Vegan Brownies Formed into Cupcakes!!!

Dear Readers,

As you all know by now, I have a weakness for sweets and sugars !!! I often find myself craving for chocolatey desserts. Since it is my trial vegan week, it was really difficult for me to find ANY desserts or candies that did not contain any milk, honey, eggs, or other animal based products. So, I made my own!!!! I’ve been in this vegan diet for almost a week now, and I’ve tried many sweet tasting vegan goodies to satisfy my cravings. However, nothing compared to this delicious treat!!! (Even my university friends approved this!!! I brought a batch to school today for everyone to taste, and they all said it was delicious)

This recipe is super straightforward!! I am fond of easy recipes and these brownie cupcakes are honestly simple to make!!! Prep time is around 10 to 15 minutes and bake time is 25 minutes.

Ingredients (Brownies)

– 2 cups flour

– 2 cups white sugar

– ¾ cup unsweetened cocoa powder

– 1 tsp baking powder

– 1 tsp salt

– 1 cup water

– 1 cup vegetable oil / canola oil

– 1 tsp vanilla extract

– 3 tbsp maple syrup

START:

1.) Preheat oven to 350 degrees F (175 degrees C)

2.) Gather ingredients. Separate dry (flour, sugar, cocoa, baking powder and salt) in a large bowl from liquid ingredients (water, oil, vanilla and maple syrup)

3.) Mix ingredients until well blended

4.) Scoop brownie batter evenly in cupcake cups

5.) Place inside the oven to bake, let it bake for 20 to 25 minutes

6.) Once cooked, let the cupcakes cool for 15 to 20 minutes

7.) Prepare for saucing / icing and toppings!

Ingredients – Caramel Sauce / Icing & Walnut Toppings!

– ¼ cup coconut oil

– ¼ cup maple syrup

– 2 tbsp almond butter

– ¼ tsp vanilla extract

– 1 cup walnuts

START:

1.) Melt coconut oil and maple syrup together in a bowl for 1 minute in the microwave

2.) Whisk almond butter to the melted coconut oil and maple syrup. Consistency must be thick and smooth (think of peanut butter spread but a bit more wet)

3.) Add vanilla and continue whisking

4.) Once the consistency is achieved set aside for a little. Then, add walnuts on top of each fully cooled cupcake.

5.) Drizzle caramel sauce on top of the walnuts and let it spread all over the top of the cupcake.
